What is the difference between processing time and shipping time?

Yes. There is a huge difference. Processing Time: An order status of "Processing" means your order has been entered into our system and pending fulfillment. The order status will remain as "Processing" until the items under go quality control checks, labeleing, and packaging. Shipping time: The date that the order is shipped from the seller or warehouse to the customer. For example, if you offer 2-day shipping, then it’s expected that when the package leaves your warehouse, it will arrive to your customer’s location two days later. It’s worth noting that ship dates may vary. This is due to store hours and stores only working business days and not weekends (e.g., if you place an order Friday night, it’s possible the order won’t ship until Monday) and even shipping cutoffs during the day.
